Mushrooms in brine

Buckets for mushrooms: salted, pickled, and sold by weight

Milk caps and saffron milk caps are salted in layers under a weight, honey mushrooms and button mushrooms are pickled, and then it all sells by weight from a market stall or in small buckets at the store. Each stage calls for its own size: wide for salting, clear for selling by weight, neat for the shelf. At the Bishkek Free Economic Zone (FEZ), HTI molds food-grade buckets from 560 ml to 21 L and ships them to mushroom processors across Kyrgyzstan and Kazakhstan.

From forest to market: a bucket for every stage

Mushrooms pass through several buckets: they're soaked and salted under a weight in a large one, pickled in a medium one, and sold from a small one. Select a stage to see the size, which mushrooms go into it, and why that bucket was chosen.

A delicate product

Caps, brine, press: what mushroom pickers watch for

Mushrooms are more delicate than cucumbers or cabbage: caps break with one careless move, and stems snap off if you pack them down. So pick packaging that means fewer transfers and lets you take the mushrooms out gently. Here's what matters to the people who harvest and sell them.

Salting under a weight11.5 L: 295 mm opening, 234 mm height
In layers, under a weight

Milk caps and saffron milk caps are salted in layers: a row of mushrooms, salt, garlic, horseradish or currant leaves, with a disc and a weight on top. The wide opening of an 11.5 or 15 L bucket lets you lay the layers evenly. Choose a disc noticeably smaller than the opening, because the body tapers toward the bottom.

Caps on show through the wall

Pickled honey mushrooms, slippery jacks, and button mushrooms sell on looks: shoppers want to see whether the caps are small and how many stems there are. A clear bucket shows all that without being opened, so the vendor doesn't have to take the lid off for every question.

No dents on the road

Mushrooms travel from the village to the market over bumpy roads, and soft packaging gets crushed along with the product. A molded wall holds its shape, and a lid seated in the double rim keeps the brine from sloshing out. The mushrooms arrive just as they were packed.

Weighing out with a slotted spoon

At the market, mushrooms are sold by weight from a 5.6 L bucket: the slotted spoon reaches the bottom, and the brine drains back into the bucket. Between customers, the bucket stays closed, so flies don't land on open marinade.

From forest to counter

Picking, salting, bazaar: a bucket for every stage

Mushrooms make a long journey: they're sorted and soaked, salted in layers or pickled, then laid out for sale. Each step calls for its own size of packaging, and a processor who keeps two or three sizes on hand has to transfer the product less often. And every extra transfer means broken caps and spilled brine.

Large buckets do the work at the salting stage, where you need a wide opening and a metal bail handle with a plastic grip; small ones work at the counter, where shoppers choose with their eyes. The middle of the range, 3.8 to 8 L, covers the pickling shop and the cafe kitchen. Our buckets for pickles page explains how much a bucket of brine weighs and why you should leave room under the lid.

How to choose

How many mushrooms and where they're headed

The right size depends on how much you put up and how you sell. A forager who sells the harvest to a middleman needs large packaging for picking and salting. One who sells directly also needs small buckets that carry the mushrooms to the customer. A shop that pickles farmed button and oyster mushrooms year-round should add an 8 L bucket to this set, sized for one batch of marinade.

Logistics

Buckets ready for mushroom season

Mushroom season is short and depends on the weather, so it's best to have packaging ready before the first harvest. Empty buckets nest inside each other, so a season's supply fits in a corner of a shed or garage. You can pick up pallets in your own vehicle from our plant in the Bishkek FEZ, Ak-Chiy village. Our own trucks deliver buckets across Bishkek and Chuy Region, and we ship to Karakol, Talas, Naryn, Osh, and Jalal-Abad via a freight carrier. For processors in Kazakhstan, including Petropavl (Petropavlovsk), Kokshetau, Oskemen (Ust-Kamenogorsk), Almaty, and other cities, we ship packaging by the pallet within the EAEU. Your sales manager confirms delivery time and cost when you place your order.

Mushroom pickers and processors: your questions answered

Yes, the buckets are molded from food-grade polypropylene. Lay the milk caps in layers with spices, then put a disc and a weight on top. Choose a disc noticeably smaller than the opening: the bucket tapers toward the bottom, and the weight needs to sink freely as the mushrooms settle.

A clear 5.6 L bucket: the mushrooms show through the wall, the 224 mm opening fits a slotted spoon, and the bail handle lets you carry the bucket from the car to the stall. For a small stall, 2.3 L is enough.

The rigid wall doesn't dent, so other cargo in the truck won't press on the mushrooms. Pack them tightly so they don't shift around, and stop the brine a little short of the top so the lid seats evenly in the rim.

Pricing depends on size, quantity, color, and printing, and our sales manager calculates it for your order. Call +996 222 600 292 and tell us how many mushrooms you plan to put up, and we'll pick packaging for both salting and selling.

Yes. You can put a label with your farm's name and the type of mushroom on the finished bucket, and for large runs, use in-mold labeling (IML): the image is fused into the wall during molding and doesn't wash off. Learn more on our IML printing page.

By the pallet within the EAEU: the plant hands the cargo over to a freight carrier, and the buckets arrive in your city. Your sales manager confirms delivery time and cost when you place your order.

By the OPEN tamper-evident tear strip under the lid rim. It's torn off on first opening, so if the strip is intact, the bucket hasn't been opened since packing. It also helps stores when receiving goods: buckets with a torn strip get set aside right away.
