Green olives, black olives, and capers reach stores and cafes in bulk packs but sell in small portions: by weight at the deli, from a market stall, in salads, and on pizza. Repacking calls for packaging that keeps the product under brine, with a lid that seats firmly on the rim. At the Bishkek Free Economic Zone (FEZ), HTI molds food-grade buckets from 560 ml to 21 L and 250 and 400 ml hexagonal containers for exactly these jobs.
Olives arrive in barrels and sell in portions: a deli needs one thing, a pizzeria another. Select a buyer to see the packaging and the weight with brine from the table on this page. In the "By weight" tab, a liter of olives with brine counts as 1.05 kg.
The rows come from this page's table: each one has its own packaging.

77 mmOnce a large tin can is opened, it can't be closed again, so the leftover olives get transferred right away. What they go into decides how the product looks on display and how much brine is lost along the way. Here's what delis, pizzerias, and packers look for.

An olive above the liquid level quickly loses its looks, so vendors make sure the product stays covered with brine. The bucket tapers toward the bottom, so a small amount of liquid stands higher in it than in a flat tray. Even when the bucket is nearly empty, the last olives don't dry out.
The vendor scoops olives with a slotted spoon, and the brine drains back into the bucket, not onto the scale. The 175-224 mm opening on the 2.3 to 5.6 L buckets fits a slotted spoon and a ladle, and the bail handle lets you tuck the bucket under the counter in one move.
A cook uses black olives and capers a little at a time, but every day. A 3.8 or 5.6 L bucket sits on the work shelf and closes with a lid that seats in the double rim, so brine doesn't spill when the bucket gets moved around.
Shoppers understand the olives were packed at the store, not at a factory, and want to know nobody has touched them since. The OPEN tamper-evident tear strip under the lid rim is torn off on first opening: an intact strip means the bucket hasn't been opened since packing.
Green and black olives come to the region from far away in bulk packs: tin cans, small barrels, and large buckets. From there, they're split into portions for each buyer: the deli, the market stall, the pizzeria kitchen. The table shows who uses which packaging and how much a full bucket weighs with brine, assuming about 1.05 kg per liter, as for other pickled products.

For selling by weight in stores and at the market, the mid-range sizes from 2.3 to 5.6 L work best: the bucket can be carried in one hand, and a slotted spoon fits easily through the opening. Small buckets and containers are ready-made retail packs that shoppers take off the shelf without weighing. Weights include brine and are rounded to 0.1 kg; the packer determines the weight of the olives themselves by draining a test sample.
Choose the size based on how fast you sell: the bucket on display should empty quickly, and reserve stock is better kept closed in larger packaging. Then the display bucket gets topped up from the reserve, and the large bucket isn't opened ten times a day.
On the same display as olives, you'll find pickles, mushrooms, and preserved fish, and in a pizzeria kitchen, sauces and dough.

You can pick up buckets and containers from our plant in the Bishkek FEZ, Ak-Chiy village. Our own trucks deliver to delis and restaurants across Bishkek and Chuy Region, and a freight carrier ships to Osh, Jalal-Abad, Karakol, Cholpon-Ata, and Talas. Containers and buckets in different sizes can be combined in one shipment.

A food-grade bucket with a lid, sized to the leftover amount: for 2-3 kg, a 2.3 or 3 L bucket works, and for a large can, 5.6 L. Cover the olives with their own brine and press the lid down until it seats in the rim.
Yes, the buckets are molded from food-grade polypropylene and are used for pickles, marinated foods, and other products in brine. The lid seats in the double rim, so brine doesn't slosh out when you carry the bucket.
A 2.3 or 3.8 L bucket works well at the deli counter: it doesn't take up much room, and a slotted spoon fits easily through its 175 or 200 mm opening. Customers take their olives home in a 250 or 400 ml hexagonal container.
Our sales manager prices each order based on sizes, quantity, color, and printing. Call +996 222 600 292 and tell us how many green and black olives you repack, and we'll quote the buckets and containers together.
Yes, with a label on the finished bucket or with in-mold labeling (IML): the image is fused into the wall during molding and won't peel off, even if a bucket of brine gets wiped down often. Learn more on our IML page.

A clear bucket shows off size and color, so big green olives and black olives sell themselves. White buckets are the pick for capers and small labeled packs, where the name and ingredients matter most.
Every bucket and container size, with dimensions and empty weight, is listed in our catalog. If you sell brynza and brined cheese alongside your olives, check out our buckets for kurt and cheese page, and for cucumbers and cabbage, see our pickle buckets page.
Tell us what packaging your green and black olives arrive in, how much you sell per week, and where: in a deli, at a bazaar, or in a restaurant kitchen. Our sales manager will pick sizes for your display, your stock, and your customers, and calculate the order.
