Packaging for frozen foods: how to choose buckets and containers

Choose packaging for frozen foods by dimensions and a test freeze, not by promises. At HTI Group in the Bishkek Free Economic Zone (FEZ), we don't claim cold resistance for our buckets and containers or specify temperature ranges. What we do know precisely is capacity, top diameter, tare weight, and units per pallet. This article shows how to use these figures to pick packaging for ice cream, berries, ready-to-cook foods, and prepped ingredients, and how to test it in your own freezer. It's written for food plants, farms, and cafes in Kyrgyzstan and Kazakhstan.

Eight products for chest freezers, cold rooms, and display cases

The table lists six buckets and two containers, from a single serving to a canteen-size batch. Next to the dimensions is a calculated column: how many items fit in one row on a meter of shelf, based on the top diameter. For chest freezers and cold rooms, that's the main limit.

Items per row are calculated from the top diameter: the lid and room for your hand take up a bit more. The 385 ml container and the 560 and 850 ml buckets share the same 118 mm diameter, so they're interchangeable in a row and differ only in height: 54, 80, and 124 mm. You can work out pallet capacity too: 1,920 of the 5.6 L buckets hold 10,752 L of product.

How to test packaging in your own freezer

We don't specify the temperatures our packaging can handle, and we won't substitute words for a real test. One test freeze tells you more than any table, because it involves your product, your freezer, and your own hands. Here are the five steps.

1Fill the packaging the way you will in production and leave headspace under the lid: liquids and purees expand as they freeze. A 560 ml body holds 650 ml brim-full, and that difference is your headspace.560 ml bucket
2Close the lid, stack the buckets in the freezer the same way you'll store the batch, and keep them there as long as the product usually sits before sale.
3Without taking them out of the cold, remove the lid, put it back on, and lift the bucket by its handle or bail. This shows whether the packaging is easy to handle for a seller wearing gloves.
4Drop a closed bucket from a shelf or cart onto the freezer floor. Packaging gets dropped in real work, and it's better to see what happens to the body and lid during a test.
5Thaw the product the way a customer would, then inspect the walls, bottom, rim, and labeling. A paper label may peel off from condensation, while an IML image is fused into the wall.

What we know for sure

Four properties to compare by the numbers

In the cold, it's the buyer who tests the packaging, not the catalog. So the question splits in two. The first part is known in advance and doesn't depend on your freezer settings: shape, top, lid, and how empty packaging behaves in storage. The second part only a test freeze can show; more on that below.

Shapes for chest freezers and shelves

The 560 ml bucket has a 118 mm top and stands 80 mm tall, while the 850 ml bucket with the same top stands 124 mm. The first goes into a chest freezer basket in two or three layers; the second saves width on a cabinet shelf. The 750 ml rectangular tray, 122 by 173 mm, fills the bottom of a basket with no empty corners. It's used for pelmeni, vareniki, and manty.

A top for spoons and scoops

Ice cream and berry puree are served with a scoop, so the top diameter matters. The 2.3 L bucket has a 175 mm top and the 5.6 L bucket a 224 mm top, so an ice cream scoop reaches the walls and bottom. In narrow, deep packaging you have to dig frozen product out; in wide packaging you scrape it off in layers.

Flat lid and OPEN tear strip

The buckets have flat lids, so closed packaging can be stacked in tiers rather than a single layer. A tamper-evident strip marked OPEN is molded under the rim: while it's intact, the bucket hasn't been opened since it left the plant. In a self-service freezer where shoppers handle products, it's a clear signal. We don't give figures for lid fit in the cold.

Empty packaging in stacks

Freezing season is short: berries and herbs come in for a few weeks, and you need a lot of packaging at once. Empty buckets nest inside each other, so one pallet holds 7,200 of the 850 ml buckets or 3,300 of the 2.3 L buckets. A pallet takes 15,000 of the 750 ml trays, so a whole season's stock fits in a corner of the warehouse.

Logistics

How to get packaging in time for the freezing season

It makes sense to buy freezer packaging in two steps: a small quantity for a trial first, then the main order after testing it in your freezer. Agree on the trial quantity with your sales manager. The main shipment goes in full pallets, and different items can travel on one truck, for example 750 ml trays for dumplings and 2.3 L buckets for puree. To pick up your order, come to Ak-Chiy: the factory warehouse is inside the Bishkek FEZ. Our own delivery trucks cover Bishkek, Tokmok, Kara-Balta, and the rest of the Chuy Region; a freight carrier delivers to Osh, Karakol, and Talas. Almaty, Shymkent, and Taraz receive pallets within the EAEU. Our sales manager will tell you the delivery cost and time. Berry farms should send their request before the harvest begins.

Questions about packaging for frozen foods

Didn't find an answer? Our sales manager replies Mon-Fri, 9:00 AM-5:00 PM Bishkek time

Polypropylene buckets are used for ice cream, berries, and prepared foods, but HTI Group doesn't claim cold resistance for them and doesn't specify temperature ranges. A test freeze gives you the answer: fill a few buckets, keep them in your own freezer, open them in the cold, and inspect the body and lid.

For retail, use the 560 and 850 ml buckets or the 385 ml round container: all three have a 118 mm top. Raspberries and strawberries crush under their own weight, so shallow packaging is gentler on them than tall packaging. A clear body shows off the berries, although in a chest freezer frost covers the wall.

Take-home portions go into a 560 ml bucket with side lugs or a 1 L bucket with a plastic handle; for scoop-and-serve display cases, use the 2.3 L and 5.6 L buckets. Sizes and portions are covered on the ice cream buckets page. Run a test to see how the packaging performs in your freezer.

Loose-frozen dumplings are easy to sell in the 750 ml rectangular tray, 122 by 173 mm, which weighs 21 g. For small portions, there are 250 and 400 ml hexagonal containers. How many dumplings fit in a tray depends on how they're shaped, so choose the size with a trial fill.

Calculate by top diameter: a 1 m row fits no more than eight buckets with a 118 mm top, seven 1 L buckets, five 2.3 L buckets, or four 5.6 L buckets. Room for your hand and the basket walls reduce that number.

Yes, if the product is liquid or very juicy: it expands as it freezes and can push the lid up. Don't fill broth, puree, or berries in syrup to the brim. The 560 ml bucket's nominal capacity already leaves headspace: the body holds 650 ml filled to the brim.

Tell your sales manager which items you need and how many pallets: different sizes travel in one shipment within the EAEU. That's how customers in Almaty, Shymkent, Taraz, and Astana get their packaging. Your sales manager will quote the delivery cost and time along with the estimate, and our article on ordering packaging for delivery to Kazakhstan walks you through the steps.

Dimensions, weight, and units per pallet for each item are on its catalog page. Small sizes are grouped under small buckets, and the order calculator helps you estimate the number of pallets for the season. Pick two or three sizes for a trial.
